Carrot Crop

We have just collected all of our carrots. We had a pretty good crop this year, and next year we will probably triple it. We decided to freeze the carrots, so I peeled them, chopped them, and blanched them for 2.5 minutes, then put them in ice water and freezer bags. We got about 4 quart-sized bags, enough for 4 meals! Our garden has been quite successful this year, and next year we hope it will be even better, as we have learned some lessons about when and where to plant.
